客家算盤子

今天又想玩烹飪. 在家人的各種建議後, 打算做客家點心 - 算盤子

這道點心可以說是家人的最愛. 但由於製作麻煩, 也就很少煮. 我老媽很會煮, 但她卻不喜歡做小吃, 尤其是製作麻煩的點心就更加不用談. 外面也不常有算盤子賣, 即使有, 味道總是少了甚麼的,不然就是不夠芋頭不夠香. 因此, 要吃好吃的算盤子就只有自己煮了 -- 當然, 是當我有mood時 .

算盤子之所以叫算盤子, 是因為它的外型像極算盤的珠子, 一粒粒的, 用芋頭加薯粉搓成.

首先, 有主要材料 - 芋頭.

做法:
1. 芋頭去皮, 切片蒸軟後用叉子按成泥狀.

2. 加入薯粉. 我用的份量是兩份芋頭, 一份薯粉. 我的芋頭去皮後有600g, 就用了約300g的薯粉. 這是給5人份的.

3. 把芋泥和薯粉搓成一個芋頭面團.

4. 從大的面團抽出少許, 搓成湯丸般大小後在中間按一下, 珠子狀的算盤子成形啦.

同時, 煮一鍋滾水, 來燙這算盤子的.

5. 椄下來是準備炒算盤子的材料:
- 香菇, 吊片泡軟, 切粒
- 蝦米泡軟
- 蒜米和蔥頭剁碎

- 豬肉也剁碎, 用少許鹽, 胡椒粉, 生抽, 頭抽, 生粉, 麻油和水醃一下.

6. 材料準備好後就, 就把算盤子放入滾水中煮, 煮到它浮起水面, 就可以撈起, 然後過冷河, 備用. 滾水中可以加點油, 以防止算盤子燙過後粘在一起. 算盤子燙熟後, 就下鍋炒了.

7. 首先, 爆香蝦米, 吊片後撈起. 再爆香蒜米小蔥頭和香菇粒後, 放入肉碎炒香.

再加入之前爆香的蝦米吊片, 些許水和蠔油一起燜一下. 調味方面我用了些許鹽, 糖和一點魚露而已. 燜到肉熟後就加入剛才燙熟的算盤子大火炒之. 炒到汁收乾後就可以上桌啦.
